The Cause :
This is the first annual Cantina EXPO and will be our kickoff for the scholarship fund. Javi’s Cantina Restaurant Bar has created a scholarship fund to support local island students to attend the university. Since there is still some building to do, we will be donating to this expense in an effort to reach this goal more quickly.

The Yucatan Education Project supports the vocational education of Isla Mujeres and Yucatan youth so that they can have meaningful, financially viable careers.

What is the Mezcal Experience?
#misticaliquida is born with the necessity of presenting a deeper Mexico through spirits and a sensorial connection. A guided 45 minute tasting parting from the tasting of a young and distilled spirit and culminating with a cocktail and pairing. It is a unique experience with the sole intention of recreating and taking you to an evening in the Mexican sierra.

Chef Paola’s Menu :
1) Crystal shrimp and tuna spicy aguachile in carpaccio bed of roasted mushrooms and grill asparagus
2) Catch of the day chilpachole infused with red guajillo sauce and epazote, charred orchard and chochoyotas with xpelon beans
3) Holy leaf lobster papillote with artesan mexican esquites with lemon and habanero mayonnaise
4) Creamy lemon pie with xtabentun (sweet mayan liquor) and smoked tangerine salt

Chef Will’s Menu:
1) Plantain MOLOTE : Fried plantain stuffed with goat cheese, served with mole.
2) Fig Salad : Glazed figs, feta cheese, mixed organic greens & a balsamic reduction.
3) TLATONILE and COSAMALO tamale. Pumpkin & sesame seed made mole, accompanied with chicken & an authentic Mexican tamale.
4) ALFAJORES
Traditional Mexican bakery made with corn & caramel, served with vanilla ice cream.
